I did a modified smoked ribs today on the bbq. I bought a smoke box for the gas grill and the wood chips. Rather than slow cook/smoke it for several hours, I did the modified quick version where you cook the ribs wrapped in foil for an hour. Then take them out, start the smoke box, and smoke for about 15-20 minutes. Still get the taste of smoke, but not as intense. Can't wait to now try it for a slow smoke over several hours.  :great

I love the smoke flavor.

250 indirect for 4 to 4.5 hrs is what I use for a St Louis rack. I generally pick ribs that have a medium amount of fat and I don't trim it off. I do remove the membrane and put a rub on it. An hour before their ready I coat with sauce.

I'm having a good time trying out this smoker box I bought. Today I smoked chicken leg qtrs. Used an applewood dry rub, and apple wood chips. Very tasty. Got the hang of using the smoker box. But the only drawback is I have to move the bbq away from the house when smoking. I had a ton of smoke going today. And today was one of those hot, muggy days with no breeze. My whole back deck area was in a fog of apple wood smoke. Had to close the back doors and windows, or else I would've smoked out my house. But now I know better.

Finally got my filtration system working in my small pond.  Fish hate it ... I guess the dark water used to offer the, more coverage.  Cost me almot $500 between pumps, filter and uv light treatment.

You know your in Texas when you server sausage and peppers with crispy bread and everyone eats the cheese burgers.

We had a group of people over for an early 4th. I make a pretty decent dish of sausage and peppers and no one other than me and my wife touched it. There is no Italian down here at all.
